Customer Review: to stick or not to stick

I've had this pan for about 6 months, and it gets frequent use. The pan replaced a similar cuzi teflon coated pan that lasted more than ten years of hard use. This one I use to fry up a mess of bacon, or brown off meat before braising. I do many one-dish meals, and this is the pan for me. It also does a nice fond and deglazing is easy. Recently, I've been fiddling with it as a wok, and it seems to do quite well (I know, I know...but it WORKS). There have been reviewers who claim that the pan sticks after a short while. I get better results when I allow the pan to heat thoroughly before adding oil. (This also helps w/ my stainless pans, to the point where I can cook an omelet and slide it out of the stainless pan.) This is a thick heavy pan, and it takes a while to heat up on a moderate heat(5 min or more). I also noticed over time that the pan tends to accumulate a baked on coating of grease/oil, and sometimes water spots from the hard water. This seems to be associated with a loss of slipperiness. When cleaning, I normally use dish soap w/ a blue 3M scrubpad. But sometimes that's not enough--watch the way the hot water sheets off the pan bottom when you rinse it. It should run off completely. If you have an area that retains the water, a close inspection under sunlight will show some kind of baked on residue (you may not see it indoors.) If I can't get it off w/ my blue scrub pad, then I add just a touch of Bon-Ami or Barkeepers Friend, and scrub lightly until the water sheets off completely. If you have hard water like I do, then it pays to dry the pan. Of course, no metal instruments, and even using it as a wok, 4/10 on the temp setting. I'm sticking with this system for my nonstick needs, no pun intended. Already have a 10" skillet and have just ordered an 8" skillet and a small sauce pan. On the down-side, the pan does seem to warp slightly when heated, so it does rock slightly on my glasstop range, but this is not a deal breaker for me. Your mileage may vary.
