I had to add a good review to this hodge podge...
I've had a set of the Green Gourmet pans for several months and I just adore them. I use them as directed but, admittedly, they have seen the dishwasher once or twice because I was in a rush. I think these pans cook like a dream and perform as advertised. They are not non-stick if you try to cook anything "dry"... it needs spray, oil, or butter. They also really need to be preheated... and eggs should be left on the counter to warm up a bit before cracking into the pan. But that is just basic cooking right there: pans should be hot and food shouldn't be thrown into the pan straight from the fridge no matter what kind of cookware you are using. I have noticed the grease build-up another reviewer mentioned, but I noticed it quickly because the inside of my pan seemed to be getting dull. Very hot, very soapy water and a good sponging took care of it. I didn't need to scour at all, probably because I noticed the build up soon enough. I avoid this now by paying closer attention when I wash and rinse these pans.... if they are not mirror shiny and the water doesn't easily bead up on the cooking surface when you rinse it, then you need to give it a better washing! I also agree with people who say the surface is quite sturdy, but I'm going to stick to using silicone utensils on these because it will surely extend the life of the pan.
No non-stick cooking surface is perfect (except maybe a beautifully seasoned cast iron pan), but I still think these pans deserve five stars. They are super performers, perfectly shaped for flipping, and they aren't poisonous. And for people who don't have the will or patience to care for cast iron or deal with stainless steel, this is a great alternative in HEALTHY non-stick cookware.
