Customer Review: Best non-stick pan after years of duds

I have had many disappointing experiences with non-stick. Some of the problems I've had: finishes that got scratched, bubbled, couldn't take high heat, couldn't go in the oven, things still stuck, browning and carmelization was pitiful, not to mention the safety issues. I was about to swear off non-stick forever, but I decided to break down and give this pan a try. It is a totally different animal (including the packaging) and I love it! The finish is so smooth and the performance is amazing. I get lovely browning when sauteing chicken, mushrooms, etc. Heat conduction is great, I can cook at a lower temp, and the handle does truly stay cool. I have a ceramic cooktop and some pans I have had didn't work well, even when they were supposed to. This one has been great. And I can finally go from cooktop to oven! I wish Cuisinart made this in a 14" size too. One final comment: I have read of some problems with the pans getting "sticky" after use. Another reviewer mentioned cooking sprays as the culprit. I have noticed they do seem to leave a sticky residue, so I don't use them anymore. The few times that happened to my pan I sprinkled a few tablespoons of baking soda in the damp, soapy pan and let it sit for about a half hour. I gently wiped out and rinsed with good results and no noticeable damage to the finish, good as new. Generally I use Ocello rinse clean no scratch sponges with great success on all my cookware.
