A quality pan for those who want quality when they cook. I am not a professional chef, but I do alot of cooking, and have used all kinds of copper cookware. From Mauvelle, to All-Clad, and I think Cuisinart Classique can stand with them in quality and performance. Some may say, that because of the alluminum core, you lose all the performance of the copper. Not true, this opinion is a personal preference, and not a fact. I have used this pot many times since I have purchased it. Doing kitchen chores such as deep fat frying, reducing sauces, to just simply melting chocolate. I have found that you need very little heat, to bring the pan up to temperature, and that it holds this temperature throughout the cooking process. Especially when melting high quality chocolate, for French Chocolate Mousse, which is a very delicate procedure. This pan is a heavy pan, weighing 5 pounds, and will last a lifetime for the regular houehold kitchen or cook. So whatever your cooking needs, where you want exact temperature control, I would suggest the Cuisinart Classique cookware. It is a good value for the money. And because it is copper, you may want it to look nice, when serving from it for the table. So you need to polish it every now and again. For those who do not care about the tarnish, then don't. And keep in mind, that when the copper discolors, it does not affect the cooking ability of the pot. So for those who have wondered what it would be like to cook with copper. Then by all means try this product. If you are not cooking professionally, you do not need to buy the name brand, highend, restaurant quality products. This will more than likely outlive you and me.
