This is a great pan. If you don't mind the extra effort needed to keep copper looking it's best, this series will become the centerpiece of any kitchen. I have several stainless 3-ply Cuisinart pans in my kitchen, as well as a few All Clad. Both brands cook and handle equally well, and both are built for a lifetime or two of service. Since I bought the first few Copper Classic pans, I feel that there is no contest anymore. The big skillet is a work of art. The finish inside and out is flawless. Both surfaces are mirror polished, and the flat area of the bottom exterior has a very fine lathe turned texture for good stove grip and even heating on electric ranges. The copper layer appears thick enough to survive endless polishing, and the huge cooking surface maintains uniform heat even on a small gas burner. A great pan at a real bargain price.

Constructed of copper, aluminum, and stainless steel, this 12-1/2-inch skillet cooks beautifully, stands out handsomely in the kitchen and dining room, and will outlive its lifetime warranty against defects. It's an expensive pan for serious cooks who appreciate its three-ply advantages. The copper exterior conducts heat quickly and evenly and responds to minute temperature changes. The aluminum core extends up the sides, so food is cooked evenly and heat is retained. The inside is heavy, 18/10 stainless steel that won't discolor, corrode, or react with food and is stick-resistant. Add a tapered rim for drip-free pouring and stainless-steel handles that are riveted for strength, and this big, slope-sided, flat-bottomed pan is ideal for frying fish and chicken or sautéing onions and spinach.
