Customer Review: I like this pot.

The empty pan is ballanced nearly evenly between handle and pan, although the empty pan will sit level on the stove top. With any amount of food in it, the pan becomes an ergonomic pleasure. It handles like a dream. Whether you have a little food or a full pan, it is a pleasure to use. The handle matches the rest of the line, which means that it is as good looking as it is functional (5 stars for both), and the pan itself conducts heat evenly, has no sharp corners to to miss while stirring, and overall makes me wonder why anyone would spend more. I use this pan every day for the most mundane tasks. After I'm done, I squirt it with some dish detergent (while it is still pretty hot), blast it with hot water and a nylon pad, and hang it on the rack until the next day. It still looks as good as it works. Although you can use any kind of utensil, I like the silicone based OXO spatula. It fits the curve of the pan, will never scratch the polished surface, and can handle very high temps. This is a great tri metal pan.

Update (12/16/03, 1 year later). After about a year of use, and many other pans added to my collection, this pan is still a favorite. It's shape and construction are perfect for anything that requires even heat and serious liquid reduction, as it has no "hot spots", and it is easy to keep the contents uniform with a quick swipe of a spoon or contured spatula.

The well rounded shape of the pan also offers another bonus, as there are no sharp transitions at the pan base, and medium to high burner settings tend to evenly heat the entire surface rather than fry the bottom and skip past the sides. For reheating one or two servings of thick stews or sauces, this thing just can't be beat. No kidding, nothing does that job as well as this pan.

There is no cover included in the price, as it is not needed for the intended purpose of the pan, but standard lids from similar diameter pots from Calphalon, Cuisinart, and All Clad fit it just fine. If you need a lid for a particular task, I'm sure that you already own one.

One last comment. Someone gave this pan a bad review because she felt that it wasn't balanced properly on the stovetop. After a year of regular use, I stand by my initial observation. When empty, the weight of the pan only slightly offsets the weight of the cast stainless handle. It can be a little "tippy", especially since it has a well rounded bottom to side configuration. When you put any amount of food in it though, it becomes a pleasure to cook with, as you never get the sense of it being a bowling ball on the end of a stick. This pan is a great addition to any kitchen, and looks as good as it cooks.

It's an expensive pan for serious cooks who appreciate its three-ply advantages. The copper exterior conducts heat quickly and evenly and responds to the minute temperature changes essential to proper sauce making. The aluminum core extends up the sides, so food is cooked evenly and heat is retained. The inside is heavy, 18/10 stainless steel that won't discolor, corrode, or react with food and is stick-resistant.
